It’s been a bit cold lately where I live – Sydney, Australia that is! Most of my dinners this week have involved some kind of meat, so I was searching for an alternative. Potato bake is a simple dish that can really be tweaked to appeal to any diet or taste that you like. This recipe consists of sweet potato and normal white potato and wait until you try it, you will love the flavour combination of the sweet potato and the nuttiness of the mushrooms. For a vegan alternative, replace the cream with a touch of soy milk, and replace cheese with breadcrumbs, sorted!

Some health facts for you – the humble sweet potato is filled with vitamins A, C and E – all of which are antioxidants that assist with the prevention of things like heart disease and cancer, they also prolong aging (so help keep you looking young a beautiful). So stop with all the anti-aging cream, and start eating some sweet potato! Hope you enjoy this simple and easy dish!

Sweet Potato Bake

Ingredients
  1. 4 x white potatoes
  2. 4 x small sweet potatoes
  3. 4 x large flat/portobello mushrooms
  4. 2 x brown onions
  5. 3 x garlic cloves
  6. 1 x bunch/bag of baby spinach
  7. 3 x cups grated cheese
  8. 250ml x single cream
  9. Salt & pepper
  10. Olive oil
Instructions
  1. Preheat oven to 180c/356f
  2. Slice up onions and finely chop garlic
  3. Finely slice potatoes, sweet potatoes and mushrooms
  4. Oil baking dish then add layer of potatoes (a mix of white and sweet potatoes), mushrooms, onion, cheese, garlic, spinach and season with salt and pepper - repeat layering until all ingredients have been used
  5. On the top/final layer, pour over cream evenly and add a layer of cheese
  6. Place in oven uncovered for 45 mins
