Everyone loves a bit of stir fry! And if you don’t, then, you’re missing out. It’s one of those dishes where you can throw in whatever ingredients you want. Here I’m keeping it fairly original by sticking to traditional vegetables like baby corn, capsicum/peppers, spring onions etc. however I am jazzing it up with marinated pork rashers.

This pork stir fry recipe is a simple and quick dish to serve up on any weeknight however the one tip I will give you is this, preparation. Have all your ingredients ready and chopped up, stir frying is about quick cooking! As always the chilli is optional with these dishes but it does add a nice bite. For my vegan and vegetarian buddies, skip the pork and replace with tofu and for a gluten-free option ensure you are using gluten free soy sauce and noodles (they don’t have to be egg noodles).

Easy Pork Stir Fry
  1. 1 x packet of dry Asian egg noodles
  2. 4 x pork rashers (use more for 2+ people)
  3. 2 x free range eggs
  4. 1 x capsicum/pepper
  5. 1 x carrot
  6. 1 x bunch of bok choy
  7. 1 x bunch of spring onions
  8. 1 x handful of baby corn
  1. 2 x cloves of garlic
  2. 1 x tbs of fresh ginger
  3. 4 x tbs soy sauce
  4. 1 x tbs sweet soy (kecap manis)
  5. 1 x tbs sesame oil
  6. 1/2 x tbs sugar
  7. Fresh chilli - optional
  1. 1. To make the marinade, combine soy, sweet soy, sesame oil, garlic, ginger, chilli and sugar in bowl
  2. 2. Dice pork into cubes and place in marinade
  3. 3. Slice up capsicum, spring onions, bok choy, carrots and baby corn
  4. 4. Get a wok and a pot of water on high, add a little oil to wok
  5. 5. Roughly fry eggs and put aside
  6. 6. When water is boiling, place noodles in, follow packet instructions for cook time
  7. 7. Add sesame oil to pan and throw in pork strips, pan must be hot! Cook for 3-4 mins
  8. 8. Throw in vegetables with remaining marinade and cook for 1 min
  9. 9. Make some space in centre of pan, add noodles
  10. 10. Throw in egg, give it a toss and you're done!
  11. Serve with extra spring onions and chilli - optional
  1. Serves 2 people
