I am a braising fanatic, chuck everything into one pot then let the love flow and magic happen. Coq au vin is the French word for chicken with wine, coq meaning cock or rooster/chicken and vin meaning wine, similar to the Spanish name for wine ‘vino’. Anyways enough with the history and language lesson, if you’ve got a bit of time up your sleeve this weekend, I would suggest giving this dish a go, super tasty!

I have used thick slices of diced pancetta but you can also use lardons, or bacon instead. I also prefer to joint my own chicken however you can buy different cuts of chicken or get your butcher to do this for you but make sure you get your chicken with the skin on! Coq Au Vin
  1. 1 x whole free range chicken or a mix of chicken pieces with skin on - breast, thighs, wings etc.
  2. 1 x brown onion
  3. 1 x red onion
  4. 3 x cloves of garlic
  5. 3 x large carrots
  6. 3 x large potatoes
  7. 3 x celery stalks - diced
  8. 3 x large flat mushrooms (or portobello)
  9. 4-5 x slices of thick pancetta or bacon
  10. 2 x tbs tomato paste
  11. 2 x cups of chicken stock
  12. 1/2 x bottle of red wine
  13. 3 x bay leaves
  14. fresh thyme
  15. salt & pepper
  1. Preheat oven to 180c / 356f
  2. Chop up carrots, celery & onions
  3. Peel and crush garlic, slice up mushrooms, potatoes & pancetta
  4. Joint chicken - if using whole chicken
  5. Get pan on high heat, add oil and brown chicken skin side down
  6. Add oil then onions, celery, mushrooms and garlic cook for 3-4 mins
  7. Add tomato paste, wine, stock, potatoes, carrots, bring to boil
  8. Add bay leaves, thyme, salt & pepper then add chicken pieces
  9. Place in oven for 90 mins
  10. Remove lid and place back in oven uncovered for 20 mins
  1. Serves 4 people
