Artichoke spinach pizza

I put on my vegetarian hat today as I have been eating way too much meat lately, especially in my salads that I take to work (a.k.a the man salad). Artichokes are an awesome vegetable, really versatile, they taste delicious and filling / good as a meat substitute if you want a lighter option. For this one, just grab the bottled or canned artichoke hearts in brine or water. Some quick health benefits of artichokes; they are good source of antioxidants such as silymarin, caffeic acid, and ferulic acid, all of these help the body protect from harmful free-radical agents. They are also a rich source of minerals like copper, calcium, potassium, iron, manganese and phosphorus, all of which contribute to a good healthy heart and balanced blood pressure.

This pizza recipe is super simple and can literally be made from start to finish in about 20 mins. As a tip, buy fresh mozzarella (the snowman shape) and grate it yourself. The packet or pre-grated cheese contain a caking agent which prevents the cheese from sticking together, but this also ruins the taste and the texture of the mozzarella. The sauce I’m using is a simple quick combination of tomato passata (or pureed tomatoes) and dried basil and if your feelin’ like you need to get your spice on, add some dried chili flakes to the end product. Artichoke and spinach pizza

Ingredients
  1. Preheat oven to 180fc/356
  2. 1 x handful of artichoke hearts (bottled in brine or water)
  3. 1 x thick flat bread or Lebanese bread
  4. 1 x Handful baby spinach
  5. 1 x handful of freshly grated mozzarella
  6. 1 x quarter red onion finely sliced
  7. 1 x handful fresh parsley
  8. Salt and pepper
Pizza base sauce
  1. 2 x tbs tomato passata (or tomato puree, not tomato paste)
  2. 1 x tsp dried basil
  3. Salt
Instructions
  1. Roughly chop up artichokes and parsley, finely slice onion
  2. Spoon tomato passata on pizza base, add dried basil, salt, add cheese, vegetables and then a bit more cheese
  3. Place into hot oven for 10-12 minutes
