So today was kind of different in that I thought to myself, ‘I haven’t really done a whole lot of baking’. So I decided to change that. I love cupcakes, mint chocolate and Aero bars, so what did I make? Aero mint chocolate cupcakes – boom!

This recipe is pretty simple and would be a great treat for a birthday party, notice how I didn’t specify a ‘children’s’ birthday? This is because I think adults of all ages would enjoy these bad boys. I’ve seen a couple of different mint choc cupcake recipes but they all call for a small amount of peppermint extract for the icing, don’t fear though, I’ve adjusted it to one full tablespoon so that the icing has some real mintyness flavour.

Aero Mint Choc Cupcakes

Ingredients
  1. Preheat oven to 170c / 338f
Cake mix
  1. 1 x cup self raising flour
  2. 1/2 x cup caster sugar
  3. 2 x tbs coco powder
  4. 2 x free range eggs - at room temperature
  5. 1 x cup of milk
  6. 100g softened butter
Icing mix
  1. 2 1/2 x cups icing sugar
  2. 1 x tbs coco powder
  3. 1 x tbs peppermint extract
  4. 1/4 x cup of milk
  5. 100g softened butter
  6. Aero or other mint chocolate - crushed
Instructions
  1. For the cupcakes, combine flour with coco powder in separate bowl
  2. In a mixing bowl, beat sugar and butter until smooth
  3. Add eggs and beat until pale and fluffy
  4. Add flour/coco mix and beat on slow until just combined
  5. Place in cupcake liners and put in hot oven for 20 mins
  6. For the icing, beat butter and icing sugar until smooth
  7. Add coco powder, peppermint extract and milk and beat until fluffy
  8. Crush up mint chocolate
  9. Remove cupcakes from oven, let them rest and cool down for 30-40 mins
  10. using a piping bag, pipe on the icing mix and sprinkle over the mint chocolate
  11. Awesomeness!
